About Food Safety & Hygiene Compliance

The official food handler card was abolished in Spain by Royal Decree 109/2010 — training your staff is now the food business operator's own legal responsibility, and you must be able to evidence it.

Why Food Safety Training Is a Legal Requirement for Spanish Food Businesses

A widespread misconception still costs businesses money: that food handlers need an official card issued by the administration. Royal Decree 109/2010 abolished that system. Since then, the duty to train staff sits directly with the food business operator, who must be able to demonstrate to an inspector that every worker has received training appropriate to their role.

Regulation (EC) 852/2004, Annex II Chapter XII, states it plainly: the operator must ensure food handlers are supervised and instructed in food hygiene matters commensurate with their work activity. There is no exemption based on business size.
